Mason is a Grim Reaper. His job is to take the souls of the living, preferably before they met a violent death to avoid the mental trauma of dying. However he's undead, he got a physical body and can interact with the living. I assume this means he got a pulse and such, however he cannot die. Being an undead though means that he needs to have somewhere to stay and food to eat. (Logically Reapers shouldn't need to eat but the theme of the shows does show them working and eating).

Now this is how Mason look like to the living unless they got other means to see through such things or if it's Halloween.
